Since I’ve been sick for the past few days I’ve been eating mostly frozen meals, dried fruit and little ice cream cones. The little ice cream cones are great because even though they’re melted when we find them, the ice cream is coated in a chocolate shell that keeps it intact until they can be frozen again. But I do have some good fresh things so I wanted to make sure I used some of them, and kept the freezer from getting too full as well.
I had some sliced pesto-marinated chicken breast, which I was suspicious of because the pesto could mask the look and smell of bad chicken. But they don’t even expire for another week, so I went ahead and thawed them and cooked them in butter for 4-5 minutes per side. They’re fine, and I didn’t even overcook them.

Then I added more butter to the pan and cooked the asparaus, adding a handful of cashews when they were half done.

I topped the whole thing with shaved Parmesan and pepper.
