Soy Chorizo Tacos

I’ve bought soy chorizo in the past and if there’s one thing I remember about it is that it stains everything red. The sausage is also kind of already crumbled inside the casing, so the sausage shape is really just there to make it look more appealing to customers. If you fry it in oil it does crisp up a lot like real chorizo, but not as well. But anyway I’ve still got some of those tortillas that I made nachos out of so I made myself a couple of tacos.

That’s just soy chorizo, some greens from a chopped Southwestern salad mix that cabbage, cilantro, and green onions in it among a few other things, some fresh salsa, and crumbled cheddar. The soy chorizo is pretty good, and even has a decent amount of heat.
